Coconut Curry With Chicken and Veggies
I've really been into Indian cuisine and curry lately so I've been trying my hand in a few new recipes. I used this recipe from Budget Bytes as a base then added some chicken breast strips I prepared beforehand and some chickpeas. It was tasty and quite hearty. One bowl was enough to satisfy. Afterwards I had a small bowl of mango sorbet to set it off.
